Tareq Taylor's Nordic Cookery (2013)

In this episode, Tareq visits Lund, a thousand-year old city in southern Sweden. Lund is surrounded by the richest farmland in the country, and we explore nearby islands and meet entrepreneurs making highly-regarded local products. Places visited include Lund, Landskrona, and the tiny island of Ven.

Tareq takes the ferry out to Bornholm, a Danish island that has seen its share of invaders and reluctantly took part in WW2. The islanders are fiercely self-sufficient and this attitude reflects in the huge number of food producers making products that are sold both locally and internationally.

Far above the Arctic Circle, Tareq explores the wild country around Jokkmokk. Jokkmokk is a town steeped in the traditions of the Sami, Sweden's indigenous people. Their adaptation to what the land provides has meant the cuisine they eat is as extreme as the weather.

Tareq is in his hometown of Malmö - Sweden's third largest city. Built up on the backs of the herring in the sea, the town is now a centre of culture and technology with a bridge connecting it to Copenhagen. The food scene here is inspired by the traditional seafood dishes and the large immigrant population whose recipes have given Malmö a new energy.

Tareq takes a late autumn trip along Finland's southern coast. He stops in the capital Helsinki to see how the city food culture is about to be discovered by the rest of the world, and dives into the freezing waters around Ekenäs, the south's most beautiful resort town. The winter may be approaching but the land and sea still provides amazing opportunities to work with local food.

Tareq heads out to Åland, a group of 6700 islands situated between Sweden and Finland. For hundreds of years, Åland's shipping fleet was the envy of navies around the world, and their sea trade was encouraged by the seafood, grains and fruits that thrive on these islands. Tareq prepares recipes to reflect Åland's unique cuisine.

Bergen is a thousand-year old city built on the back of the seafood trade, especially cod. Surrounded by some of the most beautiful landscapes in northern Europe, Bergen has emerged from various plagues and pirate invasions to become a centre for the finest seafood in northern Europe. Tareq heads into this winter wonderland to see the curious cuisine that has developed in western Norway.

Tareq arrives in Kiruna, over 200km north of the Arctic Circle. With the weather getting down to -30C, this does not deter the locals to be outside for sport and food preparation. Tareq takes part in snow picnics, firing up the smoker, and using snow and ice as part of the recipes he prepares.

Situated north of Scotland, living on this collection of eighteen islands has always be a struggle for survival. Tareq comes to understand what is in the soul of the Faroese, and why their cuisine has developed the way it has. We explore the beautiful capital Torshavn and surrounding villages, and sail into a cave for a recipe prepared on a rowboat.

Tareq pays a visit to the western part of Denmark, where he explores the region called Midtjylland. Volcanoes and glaciers shaped this part of the country, leaving a giant fjord and pre-historic fossils in their wake. Farmers and food innovators work closely with nature to prepare food with the area's plentiful herbs and award-winning seafood.

After making an initial trip to this special archipelago in Season 1, Tareq goes back to Åland to explore more of this island territory. Canoeing between the 6700 islands in Åland, Tareq finds a chef setting up a huge food village, sees forts left over from various invaders over the centuries, and learns about beer being recreated from 200 year old DNA.

There are not many places in Sweden like Tornedalen. A rushing river has provided for locals for centuries, and the very fertile land has yielded amazing crops for centuries. But being right on the Arctic Circle means the summer is short - so Tareq explores the traditions and the food that are part of this season.

At the northern-most part of Denmark, you are always close to raw, beautiful nature, and incredible sunlight that has drawn artists here for over 100 years. Tareq visits a salt maker using medieval techniques, an aquarium where he gets up close to the fish, and the town of Skagen, considered one of Denmark's most beautiful towns.

East Denmark contains some of Denmark's most fertile lands, and many formerly traditional farmers are converting to organic production and winning awards for their specialist cheeses and wine. Tareq bikes through the area to visit limestone cliffs, try some tree climbing and stop by a Viking ship heading out into the fjords.

Located in Sweden's south, beautiful Kristianstad is a 400-year old town surrounded by the ocean, fertile farmland and protected wetlands to aid the environment. In this episode, Tareq makes his own chocolate at Malmö Chokladfabrik, sees a haunted castle and learns all about the art of eel-fishing.

Tareq starts the next leg of his journey by visiting Sydvestjylland - a unique area in Denmark filled with endless contrasts. Small villages, tiny islands and beautiful coastlines all make up this area. Many food innovators are using the surrounding environment to take old traditions and apply them to the 21st century.

Sunny Nynäshamn is a resort town close to Stockholm, but there is more here than the sea. Tareq meets a prize-winning chocolate maker using ingredients from her garden, visits a thriving local food market, and gets a lesson in how to smoke fish.

Born as a mining town in the 17th century, Røros, Norway is now a center for local and organic food producers. Tareq tries dairy products which Michelin-starred chefs swear by, goes skiing and sledding around Røros many hilly streets, and learns more about the Sami people and their connection to reindeer.

Vimmerby is known as the birthplace of Astrid Lindgren, Sweden's most loved children's book author (creator of Pippi Longstocking and many others). However, Tareq finds that the area is also well-regarded for its cuisine. From the children's theme park who only serves locally produced, healthy food to the friendly moose that roam the hills, Vimmerby has a lot to offer visitors.

The mountains and months of snowfall in Trysil mean that this winter sports town has to be creative when it comes to what they can do locally. Tareq goes to a bakery which provides locals and tourists with the most delicious goods, learns how to make cheese in the traditional way, and goes skiing of course, and takes to the slopes to cook something as skiers pass by.

Located in the middle of Sweden, Värmland is home to many of Sweden's most famous authors, engineers, and inventors including Alfred Nobel. Tareq will be finding out how the ingenuity and imagination they possessed is also reflected in the local food. He gets his hands on a very rare bird to cook and also takes time out to float down a tranquil river on a wooden raft.

Tareq visits Fyn, the fairy tale capital of the world. Famous as the birth place of Hans Christian Andersen, Fyn is also known as the garden of Denmark. Here we explore stunning nature and world class cuisine. It's is a place where tradition and innovation goes hand in hand.

Created thousands of years ago, the High Coast in the northern part of Sweden is the highest coast in the world. Tareq sets out to see if he can catch Elmer, the fabled 50 kilo giant salmon of the Ångerman river. He also samples one of the most extreme types of Swedish food, fermented herring.

North Jutland has a rich and fascinating culinary history. The unique conditions have created equally unique products. Tareq meets local food entrepreneurs who have learned to adapt to this ever- changing environment, producing and harvesting amazing foods and putting this region on the culinary map.

Situated in the beautiful region of Uppland in the middle of Sweden, Uppsala is the city of knowledge: home to the oldest university in Scandinavia. It's a wonderful agricultural area surrounded by fertile flatlands where the river Fyris flows through the landscape.Tareq discovers the historical treasures of Uppsala and its thriving culinary life.

Known as the royal retreat or the riviera of Denmark, North Zealand has been a playground of the rich and famous since the fifteenth century. Tareq learns how this beautiful north eastern part of Denmark has attracted many painters with it's beautiful light and also discovers how it's beaches are a perfect place to go foraging for wild berries and herbs.

Tareq is visiting Åre, Sweden's largest ski resort. This area is well known for its local ingredients, boasting the highest number of organic food producers per capita in Sweden.The fresh water, clean air and closeness to the warm waters of the gulf stream create unique and superb conditions for growing excellent food. Tareq gets to sample Suovas: a type of reindeer meat typical to this area.

The fertile soil of the Danish Lakelands produces some of the finest ingredients that you can find. Tareq has a go at an old cooking technique from New Zealand called Hangi - using heated rocks buried in a pit oven. He also meets two young entrepreneurs who provide him with some the best farmed kelp in the world.

Gothenburg on the west coast of Sweden has recently been discovered as an exciting destination by both international travel journalists and food bloggers.Tareq samples island life on the island of Styrso and tracks down an old army barracks which is has been converted into a wold class cheese factory.

Tareq visits the unspoilt nature of Luleå, home to the beautiful Tree Hotel: a collection of treehouses built by an award winning architect. Following the river further up into the mountains he reaches the land where, for centuries, the sami people kept their reindeer herds. Their culture is still very much alive in this sub arctic region.

The Danes and the Swedes have fought over Halmstad for centuries and although today it's part of Sweden, you can still find clear evidence in the local gastronomy that it was once Danish. Tareq explores the contrast between the busy summer scene at the beach and the quiet rural country life, meeting Jörgen Persson: award winning table tennis player and visiting a village famous for its cheese.

Kemi is situated in northern Finland by the Bothnian Bay and it is part of Lapland region. Tareq trys his luck at a spot of burbot fishing on the frozen sea, then travels to see the enchanting snow castle hotel which the local residents have built every year for the past twenty years.
